Good Carb Pancakes

Dry Ingredients
1 ½ cups old-fashioned oatmeal
which have been ground in a blender or food processor until fine.
1 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup sugar
3 tablespoons chopped walnuts (optional)
Liquid Ingredients
1½ cups buttermilk
1 cup milk
1/4 cup vegetable oil
1 egg

Measure dry ingredients into a bowl. Mix to combine.

Measure liquid ingredients in a separate bowl. Beat to combine.

Add liquid ingredients to the dry.

Mix just until ingredients are thoroughly mixed, but do not over-mix. It’s OK if it has some lumps. (Over-mixing causes toughness).

Preheat griddle to 375°. Test the griddle by sprinkling a few drops of water on it. If water bounces and spatters off the griddle, it is hot enough. If your pan is not cast Iron, or non-stick, you will need to use a pastry brush to coat the griddle or pan with a small amount of vegetable oil. Wipe off excess with a paper towel.

Measure ¼ of the batter and drop it onto the griddle. Cook until the tops have a few bubbles, begin to look dry around the edges, and the bottoms are golden brown. Turn and brown the other side.

Remove and serve with "Just Apple Sauce"

The batter will often thicken as it sits. Add additional milk, 1/4 cup at a time, to make it easier to pour. ​
